NEW 'SUGAR GLASS' FILM USES VIRUSES TO KILL HARMFUL BACTERIA IN FOOD
Genetically modified crops help to improve the self life of food materials . We can also develop some method which is useful for industrial food products as there are many problems related to GM crops.
'Sugar glass' film uses virus to kill harmful bacteria in food thereby resisting contamination . We can introduce such technique in packaging which will be beneficial for mankind by reducing the food borne diseases.
In such coating we use bacteriophage which naturally infect and kill bacteria. Bacteriophage proves to be more beneficial then antibiotics because of its target specificity. In food material like cheese , yogurt etc . We have to preserve those bacteria which provides texture , order & flavor.
So , we have to be careful to remove only harmful bacteria . Sugar like 'pullulan' (a polysaccharide) use to prolong self life and 'trehalose ' used as stabilizing agent. Combination of both is more beneficial because it improves the result for 3 months. It is basically an extension of natural method for preventing contamination.
